Miso Soup

Ingredients
12 cups water1/2 medium onion (yellow), sliced into 1/2 moons10 medium baby carrots, julienned1 cup sliced mushrooms1/3 cup miso1 block firm tofu, cubed
Directions
Bring water to a boil.
Add onions, carrots, mushrooms, and tofu and bring heat to medium-high.
Cover and cook 15 minutes.

Add miso, reduce heat and simmer uncovered for 5 minutes.
