BlueValhalla's Curry Tofu Salad (1.25 cup, 220g)

Ingredients
1 container (18 oz.) firm tofu, baked1 cup (225g) non-fat yogurt1 apple, chopped2 stalks of celery, chopped0.5 cup (80g) golden raisins1 tsp curry powder0.5 tsp salt
Directions
Cut tofu into cubes and bake for about 45 minute, turning occasionally. Chop apple and celery. Add all ingredients in a large bowl and mix. Serve on top of a green salad or as a protein along with rice or other grains.
