Mini Italian Cheesecakes

Ingredients
15 oz part skim ricotta2 eggs2 egg whites1/3 cup splenda3 tablespoons vanilla16 wonton wrappers
Directions
Mix ricotta, eggs, egg whites splenda and vanilla in a bowl with hand mixxer on low speed until well mixed
Line mini muffin cups with wonton wrappers
Fill muffin cups with mixture
Bake at 350 for 15-20 minutes, place aluminum foil on top of muffins for the last 10 minutes or so to prevent from over browning.
