Baked Sweet Potato Rounds

Ingredients
1/4 tsp (or less) Olive Oil 1- 5 inch sweet potato pr two people sliced 1/2 - 3/4 inch slices1/2 tsp (or less) of Splenda Brown Sugar Blend.25 tsp ground nutmeg
Directions
Peel and slice sweet potato into 1/2 to 3/4 inch slices. One five inch sweet potato pr two people = serving size. (about half a cup) (= 1 carb unit )
Place on lightly greased (olive oil) cooking sheet or baking pan.
Lighty sprinkle with Splenda Brown Sugar Blend...(remember that it is twice as sweet as normal brown sugar...and that it is a blend of natural brown sugar and Splenda...so it is not sugar free)
Sprinkle rounds with nutmeg to taste. (A little goes a long way)
Bake at 350 for approximately 35 minutes. I like to see the edges of the potato turning a little bit brown.

    I used regular light brown sugar. I forgot the nutmeg but sprinkle it on the potatoes 5 minutes before taking them out of the oven. This recipe is simple to make and taste very good. - 8/16/17

    I didn't use Splenda Brown Sugar, I used 1 tsp of regular brown sugar instead. Just my personal preference. Also sprinkled cinnamon on the Sweet Potato discs. This was a nice treat. - 1/18/13

    I made this recipe minus the brown sugar and nutmeg. I submitted the pic above where the sweet potato rounds were part of a meal that consisted of greens and pork tenderloin. The recipe was a good way to help control sweet potato portions. Yum! - 7/11/12
