Mexican Pita Pizza (from Parenting magazine)

1 lb lean ground turkey1 cup low-fat colby-jack cheese, shredded1/2 cup finely chopped red onions1/2 cup red bell pepper, chopped1/2 cup tomatoes, chopped 1 clove garlic, minced1/2 tsp chili powder1/2 tsp ground cumin1/2 tsp salt1/4 tsp ground black pepper4 whole-wheat pita breads
Place a rack in the lower third of the oven and preheat to 425 degrees. Coat a baking sheet with cooking spray.
In a large bowl, mix together all ingredients except the pita until thorooughly combined. Divide turkey mixture among the pita bread and spread evenly over each one.
Bake until turkey is thorouhgly cooked and the top is golden, about 20 minutes. Serve with scallions, lime wedges or sour cream, as desired.
Makes four servings (or less if you use the larger pita bread.)
