Corn Guacamole

Ingredients

1/4 cup green onions (scallions), chopped - about 6 with whites and greens1-3 cloves of garlic, minced - I like my garlic so I use more1 jalapeno pepper, diced1 cup frozen corn, 1 can of corn, rinsed, or 3 cobs of grilled corn cut from the cob - I've tried all 3 methods, all 3 work4 small, ripe avocados1 tsp crushed red pepper flakes1 tsp salt1 tsp pepperjuice from 1/2 lime or 1 tbsp of lime juice1/4 cup of cilantro, chopped (I omit this cause I don't like cilantro all that much, but if you like it, definitely add it!)
Chop up all the ingredients and throw them in a bowl. Stir in lime juice to coat.
Refrigerate for a couple of hours before serving to let the ingredients meld together.
Put it in a pretty serving dish and watch it disappear!
Serve with chips, veggies, as a topping for chicken, fish or baked potatoes.
