Halibut Burritos

18 oz. Halibut2 cup Pico de Gallo6 oz. Reduced Fat Monterey Jack Cheese6 Mission Carb Balance Flour Tortillas - Soft Taco Size3 cups Refried Beans
Brown & shred up the halibut in a saucepan that's sprayed with cooking spray, once browned add 3 cups beans,1 cup Pico de Gallo, & 3 oz. of cheese. Stir up mixture until warm and melted.
Evenly place warm mixture in tortillas. Wrap and place in baking dish that's sprayed with cooking spray.
Spread the remaining 1 cup Pico de Gallo on top and evenly sprinkle the remaining 3 oz. cheese on top.
Bake covered with aluminum foil at 350 for 15 minutes.
Makes 6 LARGE burritos. One serving is half of a burrito. Serve it with a mixed salad and fresh steamed veggies for a great low fat, low cal, low cholesterol meal!
