Chicken Dijon

Ingredients
1 lb. chicken breasts, boneless, skinless-- pound them to a uniform 1/2" thickness between waxed paper1/4 c. bread crumbs1/4 c. whole wheat pastry flour1/2 tsp. paprika3 TB dijon mustard1 TB honey1 TB watersalt & pepper to taste1 TB butter
Directions
Preheat oven to 425.

In one shallow bowl mix bread crumbs, flour & paprika.

In another shallow bowl mix dijon, honey, water, salt and pepper.

Take each piece of chicken and dip into the dijon mix, then dredge in the flour mix. Place on cooking spray-coated pan. Drizzle melted butter over the top.

Bake for approximately 12-15 min, or until cooked through.
