Apple Oatmeal Muffins

1 medium sized granny smith apple, with skin--chopped finely3 tbsp ground cinammon1 tbsp ground clove1 tsp baking powder1 medium size egg1 c granulated sugar 2 c oatmeal quick oats1/4 c vegetable oil1/3 c + 2 tsp lowfat, lactose free milk1 tsp vanilla
1) Preheat oven to 150 Celsius. Line muffin molds with paper cups OR spray pan with a nonstick spray.
2) Combine sugar, oatmeal, baking powder, cinammon, and clove.
3) In separate bowl, combine milk, eggs, oil, and vanilla.
4) Add the liquids to the dry blend. Mix thoroughly until all lumps disappear. Turn in chopped apple pieces.
5) Pour in to 18 medium sized muffin molds. Pop in to oven for 30-35 minutes.
Let cool and Enjoy!
