1 bunch lettuce (I used romaine)2 potatoes1 tbsp olive oil1 large oniongarlic to tasteveggie or chicken stock, or water (I used a large saucepan's worth...several cups, but less than a quart)
dice onion and saute until translucent in olive oil. then add garlic and saute for a few more minutes. add stock or water, then add diced potatoes. once potatoes are tender, add lettuce and simmer for a few minutes. add salt and pepper. puree soup with immersion blender or in a blender. if desired, add more water to achieve desired consistency. serve with a dollup of tofu or regular sour cream and add additional salt and pepper to taste.
