Stuffed Bell Pepper

Ingredients
1/2 cup southwestern style egg beaters4 oz tuna in water ( in pouch) 3/4 cup Italian seasoned bread crumbs 2 cloves of garlic - minced1 slice of onion - minced1 (4in) stalk of celery minced1 medium bell pepper halved for stuffing insides removed
Directions

Pre heat oven to 350

While oven is heating

Combine all ingredients except bell pepper in mixing bowl until just combined.

Stuff half of stuffing into each pepper half

place in glass baking dish and bake at 350 for 30 - 45 mins until they reach level of done-ness you desire (at least 15 mins for egg)

Serve with steamed veggies or cous cous and hot sauce if desired (not in calorie count)
