Crunchy Asian Chicken Salad

Ingredients
3 boneless skinless Chicken Breasts 1/2 cup Water Chestnuts, chopped 2 medium Carrots, chopped 2 ribs Celery 1 fresh Apple, chopped 1 sweet red Pepper, chopped 2 T. Adam's peanut butter, creamy 1.5 T Soy sauce 2 T Mayo 1/4 C. chopped green onions 1 tsp. hot pepper oil
Directions
Assume a rounded 1/2 cup per serving. Makes ten.

Chop up first 6 ingredients except carrot. Peel and grate the carrot. Stir up remaining ingredients with a whisk and combine with chopped chicken and vegetables. Garnish with crushed peanuts if desired. Good in a piece of butter lettuce as a wrap.
