Citrus Banana Cheesecake

Ingredients
Crust:1 cup soft whole wheat bread crumbs1/4 cup artifical sweetener, brown or whitepinch cardamom2 tbsp margarineFilling:1 envelope unflavoured gelatin2/3 cup unsweetened grapefruit juice2 cups 1% cottage cheese1 small banana2 tbsp artifical sweetener1 tsp vanilla1 small pink grapefruit4 fresh strawberries
Directions
Crust:
1. In a bowl, combine bread crumbs, sweetener and cardamom. With fingers, rub in margarine. Press into an 8" springform pan.

Filling:
1. In a small dish or measure, sprinkle gelatin over 1/4 cup of the grapefruit juice and let stand for 5 minutes to soften. Place dish of gelatin in pan of hot water and stir until gelatin dissolves completely. Cool to room temp.
3. In food processor or blender, combine cottage cheese, banana, sweetener and remaining juice. Puree until smooth.
4. Stir in dissolved gelatin and vanilla. Pour into crust.
5. Cover and chill for 2 - 4 hours to set.
6. Remove sides from pan and with wide lifter, slip cake onto serving plate (or put cake with bottom onto serving plate)
7. Decorate with grapefruit sections and strawberry slices.

    Wow this sounds soooo good and just a fraction of the calories of a regular cheese cake. I just might have to try this out on Memorial Day. - 5/29/10

    It is good and everyone LOVED it at my house and couldn't believe it was so low in calories and fat and sugar!!
