Almond Meal Blueberry Muffins

Ingredients
* Almonds, 2.5 cup, ground * Egg, fresh, 3 large * Honey, .25 cup * Vanilla Extract, 1 tbsp * Blueberries, fresh, 1 cup
Directions
Mix all ingredients, then fold in blueberries.

Pour into greased (or lined) muffin pans (to make 12 muffins)

Bake at 300 30-35

    Lightly sweet flavor but very dense. I think it's due to the lack of oil or more liquid. Worth a shot but there are better GF recipes out there. - 10/22/16

    I used almond meal and instead of honey used maple syrup. Great snack or breakfast. - 2/12/13
