Soy Milk Ice Cream - Old Fashoined Vanilla

Ingredients
1 pint soy creamer1 cup plus 2 tablespoons sugar3 tablespoons flour1/4 teaspoon salt2 1/2 cups soy milk2 large eggs1 tablespoon vanilla extract
Directions
Combine sugar, flour and salt in saucepan. Gradually stir in soy milk. Cook over Medium heat approximately 15 minutes or until thickened, stirring constantly.

Gradually stir about 1 cup of the hot mixture into the beaten eggs.. Add the remaining hot mixture, stirring constantly. Cook 1 minute; remove from heat. Refrigerate 2 hours. Combine soy creamer and vanilla in large bowl. add chilled mixture, stirring with wire whisk to combine.

Freeze according to ice cram maker directions.
