Roo's Easy Poultry Pot Pie (1-1/3 cup per serving)

Ingredients
1-2/3 cup hot water1 - 6 oz dry stuffing mix for turkey or chicken (I prefer Stove Top)16 oz chopped cooked chicken or turkey1 - 16 oz package frozen mixed veggies, thawed1 can 98% Fat Free Cream of Chicken soup, condensed
Directions
Preheat oven to 375 degrees. Add hot water to stuffing mix; and stir until moistened. Spray a 2 quart casserole dish with cooking spray. Layer turkey and veggies, spoon cream of chicken soup over top and stir items together. Top with prepared stuffing mix and bake for 35 minutes.

Makes 6 servings that are 1-1/3 cup each
