Rainy Day Soup

Ingredients

1 egg3 cups fat free chicken broth3 cups fresh spinach, de-stemmed and cleaned2 oz thin spaghetti or capellini
Put broth in large pot. Bring to a boil.
Add pasta and let it cook to desired consistency (for capellini, this is about 3 minutes).
In small pot, boil .5 - 1 inch of water. Stuff the spinach in the pot and put the lid on.
Allow spinach to steam around two minutes or until it is bright green.
Add spinach and water to soup.
Lightly beat egg and drizzle into slowly boiling soup. It will cook instantly.
As soon as egg is added, the soup is done.

This recipe is something like what my 17 yr old daughter requests when she is having a cold or whatever ailment. Very soothing and comforting. I usually add a bit of fresh garlic and onion -- her request. I think everyone should try this recipe. You're bound to go back to it many times. - 8/3/08
