potatoes 4 - small or fingerling, 2 small eggplants, assorted beans and peas. Do not used canned beans if possible. Soak overnight for best flavor. Serrano chillies 2-3. Raw peanuts -1 tbsp, soaked for 30 minutes. Dry roasted sesame seeds 1 tbsp. Shredded coconut 1 tbsp. Salt to taste. Handful of chopped coriander.
Pre-cook all vegetables separately. Grind soaked peanuts, sesame seeds, shredded coconut, chillies, coriander and 1 tsp salt in a food processor till smooth. Heat oil in a pan, add the ground paste, 1 tbsp water and cook covered for 10 minutes. Add pre-cooked vegetables and another teaspoon of salt. Add another tablespoon or so of water and cook covered for another 10 minutes. Stir infrequently. cook for additonal 5 minutes till vegetables are cooked thorugh and evrything comes together nicely. Eat with paratha or chapati and some ghee!
