Ingredients
Pacific Natural Foods Organic Free Range Chicken Broth, 1 cup, 2 serving (remove)*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove)Feta Cheese, 4 oz (remove)Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 2 serving (remove)Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cook (remove)Olive Oil, .33 cup (remove)*Lemon Juice, .33 cup (remove)Cucumber (with peel), 1 cucumber (8-1/4") (remove)green onions
Directions
cook quinoa in chicken broth. Cook chicken breast and dice. Chop all veggies and add to cooled cooked quinoa. Add desired seasonings (s&p and herbs of your choice) to lemon juice and whisk in olive oil slowly. Toss veggies, quinoa, chicken, feta and dressing.

    it is not stated here, but for those new to using quinoa you should know that quinoa needs to be rinsed first or there may be a bitter taste to it :-) - 6/11/10
