pui cu mazare (chicken with peas)

Ingredients
* Carrots, raw, 3 large shredded * Onions, raw, 1 large chopped fine * Tomato Paste, 1 can (6 oz) * *chicken thigh no skin, no bone 2 lbs. diced * *vegeta, 2 Tbsp * Paprika, 1 tbsp * Dill weed, dried, 2 tbsp * *Canola Oil, 1 tbsp * Peas, canned, 3 cans, drained * Water, 2 cups * cornstarch, 2 Tbsp
Directions
Pour 1 Tbsp of oil into pan, saute onions and carrots until soft, about 5-7 minutes.
Add chicken and cook thoroughly, about 7 minutes.
Add Vegeta and Paprika (salt and pepper if desired)
Stir in Peas, tomato paste, and water with cornstarch. (I usually stir the water, tomato paste and cornstarch together first)
Bring mixture to a boil, then reduce to a simmer for 10-15 minutes until dish is thickened.
Serve over brown rice.
