turkey:2 tbls. olive oil3 tbls. tomato paste1 small sweet onion, red or white, finely grated, squeezed dry3 cloves garlic finely chopped1 tsp ground cumin1/2 tsp ground cinnamon1/2 tsp allspice1/4 tsp cayenne powdersaltpepper1 1/2 lbs ground turkey1/4 cup chopped flat leaf parsleySalad:2 cups baby spinach 2 tbls lemon juice1 tbls olive oilsalt pepperflat out flatbread or flat bread of your choice
whisk together the tomato paste, 2 tbls olive oil, onion, garlic, cumin, cinnamon, allspice, cayenne, salt and pepper. Add the turkey and chopped parsley. Combine well, but be careful not to work the meat too much. Place the meat mixture in the fridge, covered, for at least 1 hour or overnight.
Roll the meat into 12 even balls and press to flatten slightly. Spray your skillet and each patty with a little nonstick spray and cook for about 3-4 minutes on each side.
in separate bowl toss the spinach with 1 tbls olive oil, lemon juice, salt and pepper.
Warm the flat bread slightly and break up 1 of the kofte patties patties on the bread. Top with the apple raita and the spinach salad.
