Mediterranean Chicken Tortellini Salad

Salad2 chicken breasts, cooked and sliced into strips1 package Bertagni Porcini Mushroom tortellini, cooked10 asparagus spears, cooked & cut into chunks24 grape tomatoes, halved6 scallions, diced2 cloves garlic, minced1 jar Mancini roasted red peppers, slicedDressing1/4 cup olive oil2 tbsp red wine vinegar2 tbsp balsamic vinegar1 tbsp honey2 tbsp chopped fresh basil1 tbsp parmesan cheese1 tsp dried oregano1 tsp dried rosemary1 tsp dried thyme1 tsp half salt1 tsp black pepperTopping1 package President fat free feta cheese
Combine salad ingredients. If chicken & tortellini need to be cooked, you can combine everything while hot as it will help marinate everything together. Make sure not to overcook the tortellini as it will continue to soak up the dressing as it cools.
Combine dressing ingredients and pour over warm salad. Toss and let marinate until cool. Refrigerate for at least 4 hours.
Before serving, top with feta cheese. Don't put feta into salad while it is warm, or leave in salad as it will pick up the colour from the dressing and it won't look as pretty & colourful!
