Turkey Breast Quesadillas

Ingredients
8 whole wheat tortilla2 cups of mexican cheese 2% milk8 ounces of turkey breast, diced, cooked2 plum tomatoes, cored and thinly sliced1/4 cup cilantro, chopped4 scallions, thinly sliced2 teaspoons olive oil1 jar of medium or spicy tomato salsa
Directions
place 4 tortillas on prepared work surface. divide cheese and turkey breast evenly over tortillas. Top with the tomatoes. Sprinkle evenly with cilantro and scallions and fold in half. Heat a grill pan or griddle on medium-high or frying pan on medium-high heat. brush grill with oil. grill quesadillas one at a time, untill cheese is melted and quesadillas become golden and slightly crisp, about 4 4 minutes total each depending on what you cook it in. transfer to cutting board to cool slightly. cut into 3 wedges and serve with salsa on the side.
