Green Chile "Beef" Enchilada Bake

1.5 Tbsp Butter2 tsp olive oil1/2 large onion chopped fine2 cloves garlic, minced or smashed1/4 cup flour2 cups chopped fresh or frozen Hatch chiles2 cups vegetable broth or bouillon1/2 cup low fat sour cream
Heat fat, soften garlic and onion, add flour, stir and cook ~2-3 minutes. Add chiles and broth. Simmer 20 minutes. Adjust seasoning to taste. Turn off heat and stir in sour cream.
Spray tortillas with cooking spray and heat through on both sides. Layer three in the bottom of a sprayed casserole dish. Spoon some filling on top. Tres mas. More filling. Three more, more filling, soy cheese.
Bake at 350F for 25 minutes. Insert in face.
