Pate Chinois Ground Beef, Corn and Potatoe Casserole

1.25 lbs ground chuck2 cans creamed corn4 1/2 cups mashed potatoes (leftover or use pre-packaged)2 C cheddar or mozzarella cheese1/2 C onion, choppedsalt and pepper to taste
Brown ground beef with onion. Drain off the fat. In 9x13 casserole dish, layer beef and onion mixture, creamed corn, mashed potatoes and then top it with the cheese. Bake at 350 degrees for 30 minutes or until heated through and bubbly.
Divide into 9 equal portions.
Nutrition info is calculated using Yoder's Whipped Potatoes. Using homemade potatoes would possibly reduce the calorie count.
To lighten this up, use ground turkey breast or lean ground beef. I usually do, but my husband picked up chuck this time, so that's how I figured the nutrition info.
