Cherry Tomato and Asparagus Salad

Ingredients
1 lb asparagus, trimmed and cut into 1 inch pieces3 cups cherry tomatoes, halved2.5 oz crumbled blue or gorgonzola cheese (about 1/2 cup)1 cup basil, thinly sliced2 tbsp lemon juice2 tsp whole grain dijon mustard1/4 tsp each salt and pepper1 tbsp olive oil
Directions
Prepare an ice bath. Heat a small stock pot with water and bring to a boil. Add asparagus. Boil 2 minutes, until crisp tender, then drain and add to the ice bath to stop the cooking and cool it down. Drain the asparagus.

Combine all ingredients in a large bowl; tossing to coat.

Makes 4-6 servings.
