2 cups rice1smallish tomato1/2 small red pepper 1 small onion2 Tbsp parsley (4 Tbsp fresh)2 Tbsp crushed dried mint (4 Tbsp fresh)pinch cinnamonpinch allspicesalt and pepper if desired60 canned (or young, fresh, blanched) grape leaves1/2 cup lemon juice1/2 olive oilseveral garlic cloves
cook rice, add grated onion, finely minced tomato and peppers, and herbs. depending on size of grape leaf, add one to two tablespoons mixture and fold grape leaves around it.
layer in pan, using leaves to separate layers. tuck cloves of garlic in among the leaves. Pour mixed lemon and oil over pan and bake 1 hour.
Makes sixty small dolmas.
