Tuna Zucchini Cakes

Ingredients
1 (6 oz) can Tuna, drained1 C. Zucchini, grated1 Egg1/2 C. finely crushed Cracker Crumbs1 Tsp. Salt1/4 Tsp. Pepper1 Tbsp Mustard
Directions
Combine all ingredients and form patties. Fry to taste. For variety, add Parmesan cheese. These can also be baked in pan, instead of frying.

    I have made this recipe several times and really enjoy it. I use a Foreman Gril to cook them and serve either on a whole wheat bun or ww english muffin with all the veggies that you would put on a burger. I often put onion in the mixture and use Dijon mustard for a little more flavor. - 12/28/08
