South Beach Chicken Zucchini Frittata

Ingredients
1 tbsp trans fat free margarine1 cup sliced zucchini1/2 cup chopped cooked chicken1 roma tomato, finely chopped1/ cup finely chopped onion1/2 tsp dried Italian seasoning1/2 cup liquid egg substitute2 whole eggs
Directions
Cook zucchini in microwave, covered on high for about 2 minutes or until tender. Meanwhile, beat eggs and egg substitute to blend and set aside. Place a 10inch nonstick skillet over medium heat til hot. Add margarine. When melted, add onion and zucchini and saute til softened. Add seasoning and zuicchini then tomato and chicken. Reduce heat to low. Pour eggs over chicken mixture. Cover. Cook 5-7 minutes or til eggs are cooked on the bottom and set on top. Slide onto serving platter.
