Chicken Salad Guacamole

Ingredients
12 oz chicken breast tenderloins, baked and chopped2 avocados, chopped2 peppers (2.5 cups), finely chopped1/2 cup onion, finely chopped2 jalapenos, finely chopped5 plum tomatoes, choppedJuice of 2 limesseasoning (salt, pepper, cumin, adobo etc etc)
Directions
Bake chicken with a bit of cooking spray and seasoning. Chop and allow to cool. Prep veggies. Combine all ingredients, season and chill. Be sure to mix lime juice in well to prevent avocado from turning brown. Serve on bread or with crackers or enjoy it on its own!

    I LOVE spicy food but this had too way much jalepeno! Cut down on the jalepeno, remove the seeds and ribs, then this might be an enjoyable meal. As it is, my fiance called the experience of eating it "punishing". Still gets 4 stars because it had good flavor and without so much heat I'd love it. - 7/25/10
