Filling:1.5 cups diced rhubarb1 tbsp cornstarch1/4 cup of smuckers sugar free breakfast syrup1 tsp cinnamon1 tbsp earth natural buttery spreadLemon juiceTopping:1/2 cups old fashioned oatmeal1/4 cup ideal (xylotitol) sweetner1 tsp cinnamon2 tbsp earth natural buttery spread1 tsp ground flax seed1 tbsp ground almonds or almond meal
Mix all filling ingredients in small square baking dish until well coated. You may add more sweetner if desired, or another type of fruit such as diced strawberries
Place all topping ingredients in bowl, mix with fingers or pastry cutter until crumbly. Crumble on top of filling. Bake in 350 degree oven until top is brown, about 25 minutes. Serve warm with milk, vanilla ice cream, or whipped topping of your choice.
