Cauliflower Aglio Olio Penne

Ingredients
San Remo Pasta Extra Penne, 350gCauliflower, raw, 1 head, medium (5-6" dia)Garlic, 6 clovesSunflower Oil, 2 tbspMargarine like spread 20gParmesan Cheese, grated, 70gThai Chili Sauce, .5 tbsp
Directions
- Blanch cauliflower in salted water for 5 mins then soak in cold water til cool enough to handle.

- Dice stems and quarter tops of cauliflower as pasta cooks in the cauliflower water.

- In a medium/low heat, melt butter in oil adding the garlic for a 15 sec sizzle (no colour) before tossing in cauliflower.

- Add about 1/3 cup pasta water to the pan, reduce cauliflower to a lumpy sauce.

- Season with salt and chili sauce, add to drained pasta, sprinkle grated parmasan on top and mix through.

- Serve with extra parmasan on top and smoked salmon slices.
