Pampered Chef Quick Chicken Fajitas

3 Rainbow (Red, Orange, Yellow) Peppers 1 Onion1 Clove of GarlicLime Juice, 1 lime yields 1 packet Low Sodium Taco Seasoning8 La Tortilla Factory, Whole Wheat Low Carb Tortillas4 Chicken Breasts, no skin
1. Dice peppers and onion, line bottom of Deep Covered Baker (Pampered Chef).
2. Press one clove of garlic and sprinkle over pepper/onion mixture.
3. Squeeze 1 - 2 limes over mixture.
4. Sprinkle packet of low sodium taco seasoning over mixture to taste.
5. Place chicken breasts over pepper/onion mixture and cover baker.
6. Microwave on high for 12-15 minutes or until chicken is cooked.
7. Shred chicken using two forks.
8. Serve on La Tortilla Factory Low Carb Tortillas, add toppings as desired.
