vegetable tortilla

Ingredients
1 cup raw onion - chopped1 cup cauliflower florets (you could use any vegetable)1 cup mushrooms - chopped large pieces1 package snack dry roasted almonds - chopped2 hard boiled egg whites - chopped3 TBSP stewed tomatoes (I used ones I canned last year, but you could use fresh)lettuce leaves (I used red leaf)tortillas - I used Pinata flour tortillas
Directions
Sautee the 1st 3 ingredients in a small amount of EVOO; when almost finished add the tomatoes, eggs and nuts. Heat through, put one leaf lettuce on warm tortilla and add about 1/2 cup of vegatables. I added cheese to my husbands which he said was even better.
