Thai Cucumber Salad

6 medium cucumbers, peeled and cut into thin 2" strips2 cloves garlic, finely minced or put through a garlic press.2 tbsp. fish oilJuice of two limes1/4 cup natural peanut butter (creamy)1/4 cup ground peanuts (unsalted)1/2 tsp. salt2 tbsp. hot red pepper flakes
Peel and slice the cucumbers.
Add the garlic, fish oil, lime juice and peanut butter.
Stir until the chunks of peanut butter have disappeared, and the cucumber pieces are coated with a creamy sauce.
Add the ground peanuts and pepper flakes.
Makes about eight 1/2 cup servings.
