Red Cabbage

Ingredients
1 tsp olive oil1T grated fresh ginger1/2 tsp groung cinnamon1/4 tsp ground cloves1/2 head red cabbage (about 1 lb) shredded2 apples peeled and grated1 T pure maple syrup1/4 tsp salt2 tsp cidar vinegar1/4 c chopped walnuts
Directions
heat oil and add the ginger, cinnamon, and cloves. Cook for 10-15 seconds. Add cabbage, apples, syrup,walnuts and salt. Stir, reduce heat to low, cover and cook for about 30 minutes. Add vinegar to the cabbage mixture and cook an additional 5 minutes or till most of the liquid evaporates.
