Chocolate Lowfat Waffles

Ingredients
2 eggs, separated1 c whole wheat flour1c white flour1/3 c sugar4 t baking powder1/2 t salt1/3 c unsweetened cocoa1 1/2 c nonfat milk1 oz unsweetened baking chocolate, melted1/2 c unsweetened applesauce4 drops of liquid stevia1 t vanilla extract
Directions
Separate eggs.
In a medium bowl, stir together flours, sugar, baking powder, cocoa and salt.
In another medium bowl, beat egg yolks slightly. Stir in Milk, melted chocolate, applesauce, vanilla, and stevia. Add this liquid mixture to the flour mixture and stir until just moistened. (batter should be lumpy).
In a small bowl, beat egg whites until they form peaks. Gently fold beated egg whites into chocolate mixture, leaving a few fluffs of egg white. Do not overmix.
Preheat, waffle maker. Spray with cooking spray. Add batter to fill waffle maker. Cook until maker says it is done.

    These were good! Had never tried chocolate, and appreciated the lf approach. The egg yolk,choc, etc got a little strange looking, but once I put the flour mix in everything was fine. Cooked well. What do you top these with? I especially like making these for holidays! - 9/6/15
