1/2 lb. perch or other white fish filets1 tbs. extra virgin olive oil1 tbs. lemon juice1 tbs. dry white cooking wine1/8 tsp. Old Bay reduced sodium seasoning1/4 tsp. dried parsley1/4 tsp. dried dill weed
Makes 2 servings.
In a small frying pan, combine all ingredients except fish. Rinse fish and add to pan. Saute over medium heat, flip once if needed. As fish cooks, break into bite-size pieces with spatula. This will hasten cooking, form a broth, and flavor the fish. Fish is done when it flakes easily with a fork, and is opaque.
