flax & nut cookies low fat

Ingredients
1/2 c. whole flax seeds1-1/2 c. skim milk w. 1T. lemon juice (or just use buttermilk)2c. flour1/2 c flax seeds (ground)1c. rolled oats1tsp baking powder1tsp baking soda1/2 tsp sea salt1/4 tsp cinnamon1/2 tsp nutmeg1/2 tsp mace1/4 tsp cloves1/4c. butter1/4c. olive oil1/2c. "sunsweet lighter bake"1c. sugar2 large eggs2 tbsp vanilla2c. raw almonds chopped1/2c. raisins
Directions
1.Preheat oven to 375'. In a small bowl, soak 1/2c. flax seeds in milk and lemon juice (or buttermilk). soak 2 hrs. or so.
2.in a large bowl mix dry ingredients and blend. dont add raisins or nuts yet.
3. in another bowl beat olive oil, butter, sunsweet lighter bake, sugar, eggs and vanilla.
4. combine liquid and dry ingredients until evenly blended...add raisins and chopped almonds.
5. pam spray cookie sheet...scoop spoonfulls on cookiesheet and bake for 15min.
