Tofu Fajitas

Ingredients

1 lb firm tofu, cut into matchsticks1 1/2 cups onion, thinly sliced1 1/2 cups green pepper, thinly sliced (calorie count figured for bells)1 4-oz. can chopped green chilies, undrained1/2 cup lime juice1 Tb olive oil2 Tb vinegar3 cloves garlic, finely chopped1 tsp ground cumin1 tsp ground coriander1 tsp dried oregano
Place tofu, onions, and green pepper in 9 x 13 pan. In a small bowl, combine remaining ingredients, mixing well. Pour over tofu mixture.
Cover pan and marinate 4 or 5 hours, stirring occasionally.
Wrap tortillas in aluminum foil and heat in a 350 degree oven for 10 minutes.
Heat a large nonstick skillet over medium-high heat. Drain tofu mixture (reserving marinade) and place in skillet. Cook, stirring gently, until vegetables are slightly tender. Add marinade, a little at a time to keep mixture from sticking.
To serve, spoon filling into the center of heated tortillas, roll and enjoy (don't forget to add tortillas to your calorie count!

This is quite possibly the best tofu recipe I have ever tried. My husband and I simply loved it. It would be a great way to introduce tofu to the non-believers. - 7/12/10

It is indeed delicious, but I forgot to mention I also either cut way down on the vinegar, or leave it out depending on my mood. Too much of it would be a bit weird in a Mexican recipe. Hope you enjoy it!
