Cornflake Chicken Parmesan

Ingredients
Chicken:1 1/4 lb boneless chicken breast tenderloins1/2 cup miracle whip3/4 cup cornflake crumbsSauce:1/2 can diced tomatoes, with basil, oregano and garlic added1/2 can tomato sauce1/2 cup waterYou will also need:1 cup mozzarella cheeseParmesan cheese to taste
Directions
Start by coating chicken in Miracle Whip, then roll in cornflake crumbs. Arrange on baking sheet, then bake at 350 degrees for about 15 minutes or until almost golden brown.
While chicken is baking, pour tomato sauce and water into a saucepan. Stir in diced tomatoes and bring to a boil. Cover, turn down heat and allow to simmer for about 30 minutes or until sauce reaches desired consistency.
Spray a baking dish with nonstick spray, place chicken in dish and top with sauce and mozzarella cheese. Sprinkle with parmesan, then bake until cheese is bubbly and slightly browned.
Makes about 5 servings. Delicious served over pasta.
