Pepperoni Chicken

Ingredients
2 lb. chicken breast, cut in 1 in. cubes1 T. canola oil1 c. chopped onion1 c. chopped gr. pepper14.5 oz. can diced tomatoes, Italian Style2 tsp. garlic powder1 T dried oregano1 tsp. fennel seed1/2 tsp. black pepper1 c. sliced black olives4 oz. sliced pepperoni1 c. Italian three cheese, 2% milk
Directions
Heat oil in large, ovenproof pan. Saute chicken over medium high heat. Add onion and gr. peppers. Saute until onion is translucent. Add tomatoes through black olives. Bring to a boil. Cover and simmer 20 minutes. Heat broiler. Add pepperoni to mixture. Sprinkle cheese on top. Place under broiler until cheese bubbles and browns. If you don't have an ovenproof pan, the chicken mixture can be transferred to a casserole pan and broiled.
