Low Sodium Spaghetti Sauce

Ingredients
15 Roma Tomatoes1/4 c Green Bell Peppers,Chopped1 Onion,Chopped1 lb Ground Beef2 T Minced Garlic2 T Extra Virgin Olive Oil1 t Basil1 t White Pepper1/4 t Oregano1/4 t Thyme2 T Sugar
Directions
Chop/Dice 1 medium-sized white onion & 1 medium sized green pepper. Puree tomatoes. In separate skillet/wok, brown and crumble ground beef. When meat begins to brown, add onion and 1 Tbsp minced garlic. When meat is browned, remove from heat and add green pepper. Combine all remaining ingredients, except sugar, into a large pot. Cook on low for 1 half hour then begin adding sugar to taste. Cook for 1 additional hour, stirring frequently, and serve over pasta. Yields approximately 12 1/2 cup servings.

    I let mine simmer for hours though. I also use regular pepper instead of white pepper because it is what I have on hand.

    For those people looking for recipes with very little salt, this is very good. I eliminated the hamburger and just sauteed the onion and garlic in the olive oil. With the beginning of the season for fresh tomatoes this is a good way to use them. - 7/9/10
