My little...Meatloaf

Ingredients
Ingredients:300g Lean Ground Beef 1 small onion1 large egg1 day old roll (hard/kaiser) (soaked and squeezed out)2 Full Tablespoons of ketchup to mix in, 1 squeezed delicately on top, and one for dipping on the side (optional)Italian HerbsSalt & Pepper to taste
Directions
Preheat oven to 350°F (or 200°C)

(makes 4 fairly small servings about 75g each - can be doubled, or tripled - I've had weight-loss surgery, so for me each piece is a serving - in the case of tripling I'd leave out the 3rd egg - the mixture should stick together but not be runny.)

1. Chop onion very fine, and add to ground beef - mix together.
2. Add in egg, ketchup, and soaked squeezed out roll into the beef and onion mix - then add herbs, salt and pepper - to your desire - and mix well together. I use a fork, you can use your hand.
3. Pat down into a non-stick pan. I form it into a loaf - round or square... when I make a larger amount - I use a bread pan - and zig-zag drizzle ketchup over the top (if you want) I don't use much.
4. Place in oven mid rack center... bake for 30 minutes, check and continue to cook until finished, it's usually between 30 and 45 minutes. The smaller the amount - the less it usually needs to cook. I usually drain some of the grease - the leaner the beef - the less grease.

I serve with a tiny dollop of ketchup next to the meatloaf - but everyone is different. As a lower carb/healthy option I served it with Quinoa tonight... be creative!
