Pan seared Scallops with Pineapple-Cucmber Salsa

1 cup diced cucumber1 cup diced fresh pineapple3 Tbsp fresh chopped cilantro1 Tbsp finely choped red onion1 lime, juiced2 1/2 tsp grated lime zest1 tsp finely chopped jalapeno pepper1/4 tsp salt1/4 tsp tabasco sauce2 lbs sea scallops1 Tbsp olive oil1 Tbsp unsalted buttersalt and pepper to taste
In a medium bowl combine cucumber, pineapple, cilantro, red onion, lime juice, lime zest, jalapeno, salt, and tabasco. Adjust seasoning to taste.
Rinse the scallops and pat them dry. Season with salt and pepper to taste.
Melt the butter with the oil in a large skillet over medium high heat. Sear the scallops until golden brown, about 3 minutes per size.
Arrange on a serving platter and top with salsa.
Serves 6.
