Blueberry Banana Bread (with Grits)

1 cup all purpose flour1/2 cup whole wheat flour3/4 cup uncooked quick-cooking grits1/2 cup sugar (or sugar substitute)1/2 teaspoon salt1/2 teaspoon baking powder1/4 teaspoon baking soda3 tablespoons canola oil1 cup mashed ripe banana3/4 cup blueberries2 large eggs, lightly beatenCooking spray
Combine flour, grits, sugar, salt, baking powder, and baking soda in a large bowl; make a well in center of mixture. Combine oil, banana, blueberries, and eggs; add to flour mixture. Still just until moist.
Spoon batter into a 8x4 inch loaf pan coated in cooking spray.
Bake at 350 degrees 1 hour for a regular sized pan or about 35 minutes for 3 mini loaves. Check with a toothpick to see if it comes out dry.
Remove from oven and let it set for a few minutes before removing from pan.
