1 cup (4 slices) diced bacon1 cup sliced green onions12 - 15 oz can white hominy12 -15 oz can yellow hominy1 cup Ro-Tel tomatoes or mexican/chili tomatoes2 Tbsp. lime juice1 Tbsp chili powder1/4 cup shredded cheddar/colby low fat cheese
Cook diced bacon in a large pan. Stir in chopped green onions and cook until tender. Stir in hominy and tomatoes, drizzling with lime juice and chili powder as you go. Cook, uncovered, stirring occasionally. Serve and garnish with cheddar cheese.
