High protein chicken tater n egg

Ingredients
2 medium chicken breasts, no skin2 eggs1 medium russet potato2 tbsp Olive oil (fixed from 4)(Optional) Salt, pepper, garlic powder
Directions
Defrost the chicken breast and cut into 1/2in cubes or however you want to cut it. I diced my potato, but small pieces should be fine.

Olive oil in the skillet, kick it on high to med-high heat. Toss in the chicken and cook until you feel it is almost fully cooked, then toss in the potato. A couple minutes should be good, or at least is was for me but I'm no cook.

Toss in the eggs and proceed to cook up the lot of it for a couple minutes, mixing it evenly to ensure the egg is cooked. While the eggs are cooking, add salt, pepper, and garlic powder to taste (or any seasoning you prefer).

I figure it makes about 4 servings with side dishes. I ate the whole thing. :D

    I've made this before only I also added some onion, bell peppers, garlic - crushed, added some shredded cheese and made buritos. Husband and kids LOVED it!! became a favorite breakfast

    That's great! I might do random recipe day more often. :D

    I also highly encourage it. Just making something up as you go along can be really fun if you aren't a trained chef. Get to make guesses how things taste together or combine things you usually wouldn't think to combine.

    To make matters worse, I highly overestimated the olive oil. It was only a little more than 1 tbsp, 2 tbsp at most. Just enough to give a reasonable layer at the bottom of the skillet when moved around. So in reality the caloric content is almost half what my recipe indicates!
