Santa Fe Casserole

1 tsp olive oil1/2 medium onion, diced3 small jalapenos, diced with seeds (can remove seeds for less spice)1 green chili, diced, seeds removed8oz diced chicken1 - 28oz can diced tomatoes, drained well1 tbsp margarine/butter/olive oil1 tbsp millet flour1/2 cup milk or substitute (I used almond milk)2 tbsp low fat sour cream2 taco shells3 oz low fat Mexican style cheese
Saute jalapenos, onions, green chili, chicken in 1 tsp olive oil and a little water
Add diced tomatoes and simmer for about 5 min
Make a roux (mix together) with the butter and the flour over medium-high heat
Add the milk to the roux and mix well, stir until thickened
Melt sour cream into the white sauce
Mix the chicken and veggies, white sauce, and 2 oz of cheese together in a large casserole.
Top with broken taco shells and 1 oz of cheese
Bake at 350 for about 15-20 min until chese is melted and bubbly
