Banana Cake with Carob

Ingredients
250 g doves plain flour2 tsp baking powder125 g I can't believe it's butter225 g xylitol400 g ripe bananas1 tsp vanilla extract2 egg substitute100 g carob chips
Directions
Makes 15 slices

Preheat oven to 180˚C

Sift flour and baking powder.

Mash bananas with a fork to lumpy consistency. Stir in vanilla.

Cream butter and sugar till light and fluffy. Beat eggs lightly and add to butter & sugar mixture. Introduce a spoonful of flour at any sign of curdling.

Fold in carob and mashed banana, then flour and baking powder.

Scrape cake mix into a lined loaf tin (24 x 12 x 7 cm deep)

Bake for an hour.

Cover tin with foil and continue baking for another 45 mins to an hour.

To check if ready insert a metal skewer into the centre, it should come out moist but clean. If there is any wet mixture sticking to the skewer, bake for a few more minutes.

Cool in tin for 15 mins. Then turn out, peel off paper and leave to cool completely.
